IpsoDOC Colli Orientali del Friuli
The “IPSO Project” was born in 1999 from an intuition of Emilio Rotolo strong believer of the greatness of Pinot Grigio as a Friuli grape capable of producing wines with a great unequalled structure and longevity. The grapes destined to produce IPSO come from a vineyard of over 40 years that never yields more than 2500 kilos of grapes per hectare. The vineyard is located next to a small river, which keeps the pebbly soil adequately moist even during very dry periods. This is a wine with a very brilliant straw yellow color, it has delicious aromas of mature tropical fruits, white ﬂowers, and hazelnuts. In the mouth it expresses all the richness of the ﬂavors typical of this variety.
Serving suggestions It is able to withstand even the hardest combinations with mushrooms or white trufﬂes, excellent with eggs, white meat and mature cheeses based dishes.
